Like all of America and most of the world, life at the Pedroza home has been very unusual for the past two months. During the pandemic of 2020 known as coronavirus/COVID-19, everyone has been at home full time. Darren has been working from home. Kathryn and Landry finished their second semester of college online at home after spring break, and Jonah is finishing his 8th grade year at home working online. I’ve been doing normal things around the house – cooking, cleaning, laundry, grocery shopping, gardening, and porch-sitting.
This spring has included church at home, life groups on zoom calls, masks at grocery stores, gardening, and plenty of baking. Besides the school and work online at home, there have been lots of workouts, take-outs, and a move-out. The boys have been faithful to work out several times a week, and Kathryn has been riding the bike a lot in the neighborhood. We try to support local businesses (and give me a break from cooking) by getting take-out food usually on Saturdays. We drove to Marshall to move out Kathryn and Landry from their dorms at East Texas Baptist University much earlier than we expected.
With so much more time at home than normal, Kathryn and I have enjoyed baking more. One of the things that I’ve baked several times that has become a family favorite is my Aunt Reta’s Monster Cookies (or Triple Chipper Cookies). They’re easy to bake; and they make a large batch, which is important around here during this “stay-at-home” time.

Monster Cookies
Combine - 1 cup softened butter Combine - 1 c. softened butter 1 c. brown sugar 1/2 c. white sugar Add - 2 eggs 2 tsp vanilla 2 1/2 c. flour (2 3/4 makes chewier cookies) 1 tsp. baking soda 3/4 tsp. salt 2 c. semi-sweet chocolate chips 1/2 c. white chocolate chips 1/2 c. peanut butter chips Bake at 350* for 12-14 minutes
I want to remember this time as a family, not just the negative news or politics going on all around us. I want to do my best to take advantage of this time with all of us under one roof, noticing the good, sharing meals and desserts together, and remembering that our God is faithful and trustworthy!
